1 Preface

1 前言
在米曲霉類型的豆豉生產(chǎn)中, 為了保證豆豉產(chǎn)品的品質(zhì)特點(diǎn), 使豆豉成品更光亮并減小苦澀味,豆豉的成曲須用清水把表面的菌絲體、分生孢子及其粘污物進(jìn)行清洗, 并且要求在洗的過(guò)程中, 盡可能地保持豆豉的成曲表皮完整不脫落, 成曲洗滌后表皮無(wú)菌絲、豆身油潤(rùn)。目前, 米曲酶類型的豆豉成曲的洗滌方法在調(diào)味廠中大多數(shù)是用手工的方法進(jìn)行, 其勞動(dòng)強(qiáng)度大、生產(chǎn)環(huán)境差、洗滌效果不保證。為此, 本文介紹一種新型的連續(xù)豆豉洗霉機(jī), 這種連續(xù)式的豆豉洗霉機(jī)在洗酶時(shí)對(duì)成曲后的黑豆具有打散和搓洗的功能, 豆豉曲料的脫皮率低, 洗滌豆豉成曲表面的菌絲體、分生孢子及其粘污物后, 豆豉曲料在機(jī)器的噴淋下, 可以得到適當(dāng)?shù)幕貪? 洗酶工作可以連續(xù)進(jìn)行, 具有勞動(dòng)強(qiáng)度低, 效率高, 便于操作, 便于維修等優(yōu)點(diǎn), 同時(shí)該機(jī)設(shè)有水循環(huán)使用系統(tǒng), 可以充分利用水資源, 減少?gòu)U水的處理量, 有利于環(huán)境保護(hù)的功能。該豆豉洗霉機(jī)在豆豉生產(chǎn)廠家試用, 取得了很好的效果。
2 連續(xù)豆豉洗霉的工作原理
經(jīng)制曲后的黑豆曲料通過(guò)機(jī)械或人工在進(jìn)料控制器的控制下以一定的流量送入洗酶機(jī)的進(jìn)料口( 見圖中1 所示) , 曲料的流量, 由進(jìn)料閘門控制( 見圖中1) , 曲料流入洗酶機(jī)的洗酶槽后, 洗酶槽中的圓刺棍轉(zhuǎn)動(dòng)并帶動(dòng)洗酶機(jī)中的水運(yùn)動(dòng), 水流把成團(tuán)的曲料打散和對(duì)生長(zhǎng)在料曲表面的菌絲體、分生孢子及粘污物進(jìn)行沖刷洗凈。料曲流出后進(jìn)入帶式噴淋機(jī)( 見圖中2 所示) , 噴淋水進(jìn)一步對(duì)豆曲進(jìn)行沖洗。噴淋帶的噴淋水清洗后豆曲后被循環(huán)到洗酶機(jī)中進(jìn)行下一批料曲的清洗。在洗霉的過(guò)程中, 若出現(xiàn)過(guò)大的曲料未被水流沖散而堵塞洗霉槽時(shí), 洗霉機(jī)設(shè)有兩個(gè)射流式?jīng)_洗裝置, 在無(wú)需停機(jī)的情況下把堵塞洗霉槽的結(jié)塊曲料沖散, 保證機(jī)器的連續(xù)運(yùn)轉(zhuǎn), 洗霉機(jī)可視曲料的洗霉要求進(jìn)行無(wú)級(jí)調(diào)速。
3 連續(xù)豆豉洗霉機(jī)的結(jié)構(gòu)
連續(xù)豆豉洗霉機(jī)的結(jié)構(gòu)由兩臺(tái)單機(jī)組成,一是洗霉機(jī), 二是帶式噴啉機(jī), 整機(jī)如圖所示:

3.1 洗霉機(jī)
主要由入料料斗、進(jìn)料控制器、水槽( 見圖中2) 、洗霉槽( 見圖中3) 、圓刺棍( 見圖中4) 、出料口( 見圖中5) 、傳動(dòng)裝置等組成。入料料斗。這是一個(gè)四方錐形的中空體, 豆豉曲料由輸送裝置或人工由此進(jìn)入洗霉機(jī), 料斗的下方有一進(jìn)料控制器, 控制曲料的進(jìn)入量。洗霉槽。作用是給表面帶菌絲體、分生
孢子、粘污物的豆豉曲料與水進(jìn)行搓洗的空間以及調(diào)整在洗霉過(guò)程中的生產(chǎn)量、防止堵塞等。
圓刺棍。這是洗霉機(jī)的主要裝置, 裝置的形式是一圓拄形的棍棒上帶有一系列的小圓棒, 小圓棒的數(shù)量與安裝角度視所處理的豆豉曲料菌絲體、分生孢子、粘污物的形式、生長(zhǎng)情況等情況而定。在圓刺棍的設(shè)計(jì)上,該機(jī)應(yīng)用流體力學(xué)的原理, 裝置的洗霉是以水流的運(yùn)動(dòng)與豆豉曲料表面的! “霉”以及其粘污物進(jìn)行摩擦而達(dá)到! “凈化”的, 因此, 豆豉曲料的脫皮較少, 水流與豆豉曲料! “摩擦”后, 曲料的表面較光滑。
出料裝置。洗霉機(jī)的出料口設(shè)在洗霉槽靠近末端橫截面的切線位置上, 設(shè)有調(diào)整出料量的裝置, 可以方便地視曲料的需要而進(jìn)行調(diào)整, 防止曲料堵塞的射流沖洗裝置設(shè)在出料裝置的上方。
溢流裝置。溢流裝置在洗霉機(jī)中的作用是把洗霉后的被清洗物( 菌絲體、分生孢子、粘污物、雜物等) 在短時(shí)間內(nèi)排出機(jī)外, 該機(jī)的溢流口設(shè)在與洗霉槽端面水平的位置上,且有足夠的溢流空間, 可以保證洗霉后的被清洗物在短時(shí)間內(nèi)排出機(jī)外。
3.2 帶式噴淋機(jī)
主要由輸送帶、料厚控制器、噴淋噴頭、噴淋水回收系統(tǒng)及傳動(dòng)系統(tǒng)等。帶式噴
濕度進(jìn)行適當(dāng)?shù)恼{(diào)整。帶右#將辣椒切割成3~ 4 cm, 加入牛油中低溫浸提1 h 左右- 加入粉碎花椒, 炒至出來(lái)麻味-加入老姜粉末、大蒜丁, 炒至味出-加入用黃酒溶的豆豉- 稍炒- 加入醪糟汁、冰糖、味精、雞精和酵母精- 加入熟菜籽油炒4~ 5 分鐘- 包裝-121 ? , 30 min 高溫滅菌-檢驗(yàn)-成品。
4.2 操作要點(diǎn)
4.2.1 首先要了解所用原料的特點(diǎn)以及在火鍋調(diào)味料中的作用。
豆瓣使湯鹵顏色紅亮, 并產(chǎn)生醇和的辣味和咸鮮之味, 增加鹵汁香味; 醪糟汁則增鮮壓腥, 去異味, 使湯鹵有回甜之味; 花椒可以調(diào)味增香, 壓腥去異味; 干辣椒增加湯鹵中的辣味和香味; 精鹽定味增香, 提鮮加香, 壓制異味; 味精、酵抽提物、雞精都可以增鮮, 而且酵母抽提物中的鮮味物質(zhì)耐高溫, 可使湯鹵
長(zhǎng)時(shí)間燙煮而不失醇厚的鮮味; 冰糖去燥回味余甜; 五香料可去燥、去腥, 潤(rùn)色等; 牛油不但可提供火鍋底料固體形態(tài), 和植物油一樣,也具有增香的作用。
4.2.2 精選原料是制作火鍋底料的基礎(chǔ)
例如, 辣椒和花椒, 從季節(jié)上講, 每年7~ 8月出產(chǎn)的花椒就比10 月出產(chǎn)的秋椒品質(zhì)好。若從產(chǎn)地看, 陜西、四川富順、西昌、茂汶出產(chǎn)的花椒, 都顯的麻味足, 且香氣品質(zhì)好。選花椒一般都選色氣油潤(rùn), 顆粒均勻, 花椒中小黑籽少,枝桿少, 香味濃郁持久, 用牙咬破后麻味足的花椒為好。干辣椒從品種上分有長(zhǎng)辣椒、二金條、朝天椒、七星椒及云南小米椒等, 二金條辣椒色氣好, 香味正, 辣味柔和, 而朝天椒、七星椒、小米椒則個(gè)頭小而尖, 辛辣無(wú)比, 因此制作火鍋底料就可以利用兩者之長(zhǎng), 兼而用之。豆瓣醬以四川郫縣生產(chǎn)的為正宗, 豆豉以永川陳年豆豉為好, 其他應(yīng)購(gòu)買質(zhì)量好的原料。
4.2.3 炒制過(guò)程中的問(wèn)題
一是豆瓣以炒香發(fā)色油紅發(fā)亮為止, 炒嫩了吃起來(lái)有生豆瓣味, 豆瓣中的淀粉也易使糖鹵渾濁; 豆瓣炒老了, 易使湯汁變黑, 味苦。二是香料的搭配, 各種香料一定要按比例加入, 否則, 湯料易產(chǎn)生苦味和不適宜的香味, 也易改變川味火鍋的風(fēng)味。

一.選題依據(jù)及意義
為適應(yīng)食堂、大型飯店、快餐中心等的需要,我們?cè)O(shè)計(jì)研制了一種新型連續(xù)式洗米機(jī)。

該機(jī)組結(jié)構(gòu)如圖1所示,主要由料斗、水平螺旋、傾斜螺旋、機(jī)架、動(dòng)力裝置、噴水裝置等部分組成。
其工作原理為:大米至料斗加入,經(jīng)過(guò)水平螺旋的輸送進(jìn)行揉搓洗滌,大米中的漂浮雜質(zhì)在此過(guò)程中漂出,與洗滌的濁水一起從溢流口排出。大米經(jīng)過(guò)水平螺旋輸送洗滌完后,進(jìn)入傾斜螺旋,在傾斜螺旋的入口處,沉降速度較快的沙石則被沉降在沙石沉積槽內(nèi)(小槽下有螺孔,可定時(shí)拆下進(jìn)行清洗),大米則隨著傾斜螺旋的轉(zhuǎn)動(dòng),被進(jìn)一步揉搓洗滌并往上輸送,最后經(jīng)過(guò)噴水裝置以上的瀝干段瀝干后從排料口排出,完成洗米操作。而洗滌水在洗米過(guò)程中從噴水裝置處噴入,沿傾斜螺旋往下流動(dòng),經(jīng)過(guò)水平螺旋,最后從溢流口流出。機(jī)組在整個(gè)洗米過(guò)程中水流與米成逆流流動(dòng),保證了較好的洗滌效果。為了確保水與米能成較好的逆流流動(dòng),在傾斜輸送螺旋上鉆小孔,并使傾斜螺旋的上蓋與螺旋留有一定的間隙,水平螺旋則采用敞蓋,也便于漂浮雜質(zhì)浮出。
機(jī)組設(shè)計(jì)主要特點(diǎn):一是米在用螺旋輸送過(guò)程中同時(shí)進(jìn)行揉搓,使機(jī)組結(jié)構(gòu)簡(jiǎn)單,運(yùn)作可靠;二是米流成逆流流動(dòng)保證了用水少和較好的洗滌效果;三是漂浮雜質(zhì)有足夠的漂浮空間,保證洗滌能較徹底地除去米中的漂浮雜質(zhì)。
螺旋輸送機(jī)是糧食及機(jī)械加工等部門廣泛應(yīng)用的一種連續(xù)輸送設(shè)備。螺旋輸送機(jī)與其它輸送設(shè)備相比,具有整機(jī)截面尺寸小、密封性能好、運(yùn)行平穩(wěn)可靠、可中間多點(diǎn)裝料和卸料及操作安全、維修簡(jiǎn)便等優(yōu)點(diǎn)。
二、國(guó)內(nèi)外研究概況及發(fā)展趨勢(shì)(含文獻(xiàn)綜述)
過(guò)去二十年多年,許多研究工作者將帶式輸送機(jī),用各種各樣的線性模型來(lái)描述或者至少是便于數(shù)學(xué)計(jì)算的模型。在動(dòng)力學(xué)分析中,由于輸送帶大變形和粘彈性的并存,使非線性問(wèn)題變得十分突出,已達(dá)到了不能忽略的程度,而且許多不穩(wěn)定的工程實(shí)例,使得它們的動(dòng)態(tài)特性無(wú)法用簡(jiǎn)單的線性特性來(lái)解釋??v觀起來(lái),對(duì)于帶式輸送機(jī)系統(tǒng)的研究,在理論分析方面,采用線性動(dòng)力學(xué)理論進(jìn)行研究的較多,而采用非線性振動(dòng)理論分析研究的極少;在系統(tǒng)設(shè)計(jì)方面,采用傳統(tǒng)設(shè)計(jì)方法的較多,而采用現(xiàn)代設(shè)計(jì)方法的極少。
張力控制普遍采用速度檢測(cè)的方法,將檢測(cè)到的主動(dòng)輪速度經(jīng)過(guò)處理后控制送絲及收絲機(jī)構(gòu),再分別檢測(cè)送絲及收絲速度,處理以后輸入控制系統(tǒng),從而形成閉環(huán)控制。這樣做成的控制系統(tǒng)較為龐大,造價(jià)高。本文所述的方法簡(jiǎn)單實(shí)用、造價(jià)低,效果很好。
國(guó)外帶式輸送機(jī)設(shè)計(jì)系統(tǒng)
國(guó)外已有多家工程設(shè)計(jì)公司致力于帶式輸送機(jī)設(shè)計(jì)系統(tǒng)的研究,并開發(fā)出各具特色的滿足不同應(yīng)用要求的設(shè)計(jì)系統(tǒng)。
美國(guó)cDI公司主要從事帶式輸送機(jī)的設(shè)計(jì)和咨詢工作,在國(guó)際輸送機(jī)設(shè)計(jì)領(lǐng)域處于領(lǐng)先地位,主要業(yè)務(wù)范圍包括機(jī)械設(shè)計(jì)、水平曲線設(shè)計(jì)、動(dòng)態(tài)分析和張力控制系統(tǒng)設(shè)計(jì)、設(shè)備調(diào)試及試運(yùn)行等等。
澳大利亞的Helix Technologies Pty Ltd專門從事工程軟件開發(fā),已開發(fā)出一系列工程管理、投資分析的軟件系統(tǒng),如輸送機(jī)設(shè)計(jì)、管道網(wǎng)絡(luò)分析、泵的選型和V型輸送帶/鏈的驅(qū)動(dòng)設(shè)計(jì)等。
Overland Conveyor Co., Inc.(OCC)是美國(guó)一家專門從事散料運(yùn)輸?shù)淖稍児?,開發(fā)出的靜態(tài)分析軟件(Belt Analyst II)和動(dòng)態(tài)分析軟件(Dynamic Analyst),為用戶提供帶式輸送機(jī)系統(tǒng)設(shè)計(jì)、工程和運(yùn)行評(píng)估。
國(guó)內(nèi)帶式輸送機(jī)技術(shù)研究現(xiàn)狀
近二十年來(lái),我國(guó)帶式輸送機(jī)有了很大的發(fā)展,對(duì)帶式輸送機(jī)的關(guān)鍵技術(shù)研究和新產(chǎn)品開發(fā)都取得了可喜的成果。輸送機(jī)產(chǎn)品系列不斷增多,開發(fā)了大傾角、長(zhǎng)距離新型帶式輸送機(jī)系列產(chǎn)品,并對(duì)帶式輸送機(jī)的關(guān)鍵技術(shù)及其主要部件進(jìn)行了理論研究和產(chǎn)品開發(fā),應(yīng)用動(dòng)態(tài)分析技術(shù)和中間驅(qū)動(dòng)與智能化控制等技術(shù),成功研制了多種軟啟動(dòng)和制動(dòng)裝置及以PLC為核心的可編程電控裝置。
目前,國(guó)內(nèi)多所高校和科研機(jī)構(gòu)在進(jìn)行帶式輸送機(jī)的研究,遼寧工程技術(shù)大學(xué)在有限元分析、啟制動(dòng)曲線、水平轉(zhuǎn)彎及斷帶檢測(cè)等方面進(jìn)行了研究.東北大學(xué)對(duì)托輥運(yùn)行阻力隨帶速變化進(jìn)行了實(shí)驗(yàn)研究,用于帶式輸送機(jī)設(shè)計(jì)和動(dòng)態(tài)分析,分析轉(zhuǎn)彎部分的導(dǎo)向力和阻力,得出轉(zhuǎn)彎段輸送帶運(yùn)行的阻力計(jì)算方法,采用離散模型建立系統(tǒng)的動(dòng)力學(xué)方程,開發(fā)平面轉(zhuǎn)彎帶式輸送機(jī)動(dòng)態(tài)分析系統(tǒng)[}}2-}4};上海交通大學(xué)在帶式輸送機(jī)縱向振動(dòng)理論與橫向振動(dòng)理論的基礎(chǔ)上,提出了帶式輸送機(jī)的動(dòng)態(tài)設(shè)計(jì)方法以及該方法與計(jì)算機(jī)技術(shù)相結(jié)合的設(shè)計(jì)決策支持系統(tǒng)。
隨著研究工作不斷深入,帶式輸送機(jī)動(dòng)力學(xué)性能研究積累了大量的寶貴經(jīng)驗(yàn)和資料,利用新的設(shè)計(jì)手段研究帶式輸送機(jī)動(dòng)力學(xué)模型的時(shí)機(jī)已經(jīng)成熟。帶式輸送機(jī)的技術(shù)關(guān)鍵是動(dòng)態(tài)設(shè)計(jì)與監(jiān)測(cè),它是制約帶式輸送機(jī)發(fā)展的核心技術(shù)。

五、目標(biāo)、主要特色及工作進(jìn)度
(1)研究目標(biāo)
本課題旨在設(shè)計(jì)一臺(tái)螺旋輸送式洗米機(jī),該新型連續(xù)式洗米機(jī)結(jié)構(gòu)簡(jiǎn)單、占地面積小、集搓米、洗米、除去漂浮雜質(zhì)、沙石等于一體,采用水流與米流逆流流動(dòng),用水量少、洗滌效果好,是一種高效的連續(xù)式洗米機(jī)R機(jī)組。該機(jī)型除用于洗米外,也能用于豆類等其他顆粒性糧食的洗滌,是食堂、大型飯店、快餐中心及釀造、豆類加工作業(yè)中較為理想的糧食洗滌機(jī)械。
