一.選題依據(jù)及意義
為適應食堂、大型飯店、快餐中心等的需要,我們設計研制了一種新型連續(xù)式洗米機。

該機組結構如圖1所示,主要由料斗、水平螺旋、傾斜螺旋、機架、動力裝置、噴水裝置等部分組成。
其工作原理為:大米至料斗加入,經過水平螺旋的輸送進行揉搓洗滌,大米中的漂浮雜質在此過程中漂出,與洗滌的濁水一起從溢流口排出。大米經過水平螺旋輸送洗滌完后,進入傾斜螺旋,在傾斜螺旋的入口處,沉降速度較快的沙石則被沉降在沙石沉積槽內(小槽下有螺孔,可定時拆下進行清洗),大米則隨著傾斜螺旋的轉動,被進一步揉搓洗滌并往上輸送,最后經過噴水裝置以上的瀝干段瀝干后從排料口排出,完成洗米操作。而洗滌水在洗米過程中從噴水裝置處噴入,沿傾斜螺旋往下流動,經過水平螺旋,最后從溢流口流出。機組在整個洗米過程中水流與米成逆流流動,保證了較好的洗滌效果。為了確保水與米能成較好的逆流流動,在傾斜輸送螺旋上鉆小孔,并使傾斜螺旋的上蓋與螺旋留有一定的間隙,水平螺旋則采用敞蓋,也便于漂浮雜質浮出。
機組設計主要特點:一是米在用螺旋輸送過程中同時進行揉搓,使機組結構簡單,運作可靠;二是米流成逆流流動保證了用水少和較好的洗滌效果;三是漂浮雜質有足夠的漂浮空間,保證洗滌能較徹底地除去米中的漂浮雜質。
螺旋輸送機是糧食及機械加工等部門廣泛應用的一種連續(xù)輸送設備。螺旋輸送機與其它輸送設備相比,具有整機截面尺寸小、密封性能好、運行平穩(wěn)可靠、可中間多點裝料和卸料及操作安全、維修簡便等優(yōu)點。
二、國內外研究概況及發(fā)展趨勢(含文獻綜述)
過去二十年多年,許多研究工作者將帶式輸送機,用各種各樣的線性模型來描述或者至少是便于數(shù)學計算的模型。在動力學分析中,由于輸送帶大變形和粘彈性的并存,使非線性問題變得十分突出,已達到了不能忽略的程度,而且許多不穩(wěn)定的工程實例,使得它們的動態(tài)特性無法用簡單的線性特性來解釋。縱觀起來,對于帶式輸送機系統(tǒng)的研究,在理論分析方面,采用線性動力學理論進行研究的較多,而采用非線性振動理論分析研究的極少;在系統(tǒng)設計方面,采用傳統(tǒng)設計方法的較多,而采用現(xiàn)代設計方法的極少。
張力控制普遍采用速度檢測的方法,將檢測到的主動輪速度經過處理后控制送絲及收絲機構,再分別檢測送絲及收絲速度,處理以后輸入控制系統(tǒng),從而形成閉環(huán)控制。這樣做成的控制系統(tǒng)較為龐大,造價高。本文所述的方法簡單實用、造價低,效果很好。
國外帶式輸送機設計系統(tǒng)
國外已有多家工程設計公司致力于帶式輸送機設計系統(tǒng)的研究,并開發(fā)出各具特色的滿足不同應用要求的設計系統(tǒng)。
美國cDI公司主要從事帶式輸送機的設計和咨詢工作,在國際輸送機設計領域處于領先地位,主要業(yè)務范圍包括機械設計、水平曲線設計、動態(tài)分析和張力控制系統(tǒng)設計、設備調試及試運行等等。
澳大利亞的Helix Technologies Pty Ltd專門從事工程軟件開發(fā),已開發(fā)出一系列工程管理、投資分析的軟件系統(tǒng),如輸送機設計、管道網(wǎng)絡分析、泵的選型和V型輸送帶/鏈的驅動設計等。
Overland Conveyor Co., Inc.(OCC)是美國一家專門從事散料運輸?shù)淖稍児?,開發(fā)出的靜態(tài)分析軟件(Belt Analyst II)和動態(tài)分析軟件(Dynamic Analyst),為用戶提供帶式輸送機系統(tǒng)設計、工程和運行評估。
國內帶式輸送機技術研究現(xiàn)狀
近二十年來,我國帶式輸送機有了很大的發(fā)展,對帶式輸送機的關鍵技術研究和新產品開發(fā)都取得了可喜的成果。輸送機產品系列不斷增多,開發(fā)了大傾角、長距離新型帶式輸送機系列產品,并對帶式輸送機的關鍵技術及其主要部件進行了理論研究和產品開發(fā),應用動態(tài)分析技術和中間驅動與智能化控制等技術,成功研制了多種軟啟動和制動裝置及以PLC為核心的可編程電控裝置。
目前,國內多所高校和科研機構在進行帶式輸送機的研究,遼寧工程技術大學在有限元分析、啟制動曲線、水平轉彎及斷帶檢測等方面進行了研究.東北大學對托輥運行阻力隨帶速變化進行了實驗研究,用于帶式輸送機設計和動態(tài)分析,分析轉彎部分的導向力和阻力,得出轉彎段輸送帶運行的阻力計算方法,采用離散模型建立系統(tǒng)的動力學方程,開發(fā)平面轉彎帶式輸送機動態(tài)分析系統(tǒng)[}}2-}4};上海交通大學在帶式輸送機縱向振動理論與橫向振動理論的基礎上,提出了帶式輸送機的動態(tài)設計方法以及該方法與計算機技術相結合的設計決策支持系統(tǒng)。
隨著研究工作不斷深入,帶式輸送機動力學性能研究積累了大量的寶貴經驗和資料,利用新的設計手段研究帶式輸送機動力學模型的時機已經成熟。帶式輸送機的技術關鍵是動態(tài)設計與監(jiān)測,它是制約帶式輸送機發(fā)展的核心技術。
三、研究內容及實驗方案

五、目標、主要特色及工作進度
(1)研究目標
本課題旨在設計一臺螺旋輸送式洗米機,該新型連續(xù)式洗米機結構簡單、占地面積小、集搓米、洗米、除去漂浮雜質、沙石等于一體,采用水流與米流逆流流動,用水量少、洗滌效果好,是一種高效的連續(xù)式洗米機R機組。該機型除用于洗米外,也能用于豆類等其他顆粒性糧食的洗滌,是食堂、大型飯店、快餐中心及釀造、豆類加工作業(yè)中較為理想的糧食洗滌機械。
(2)主要特色
一是米在用螺旋輸送過程中同時進行揉搓,使機組結構簡單,運作可靠;二是米流成逆流流動保證了用水少和較好的洗滌效果;三是漂浮雜質有足夠的漂浮空間,保證洗滌能較徹底地除去米中的漂浮雜質。

摘要: 介紹豆豉釀造的新型洗霉設備- 連續(xù)式豆豉洗霉機的原理和設計思路, 連續(xù)式的豆豉洗霉機的使用, 使米曲酶類型的豆豉成品更光亮并減小苦澀味, 有利于提高豆豉的產品質量和生產效率; 有利于減少工人的勞動強度和建造良好的生產環(huán)境; 有利于提高勞動生產力和實現(xiàn)釀造行業(yè)的機械化。

1 前言
在米曲霉類型的豆豉生產中, 為了保證豆豉產品的品質特點, 使豆豉成品更光亮并減小苦澀味,豆豉的成曲須用清水把表面的菌絲體、分生孢子及其粘污物進行清洗, 并且要求在洗的過程中, 盡可能地保持豆豉的成曲表皮完整不脫落, 成曲洗滌后表皮無菌絲、豆身油潤。目前, 米曲酶類型的豆豉成曲的洗滌方法在調味廠中大多數(shù)是用手工的方法進行, 其勞動強度大、生產環(huán)境差、洗滌效果不保證。為此, 本文介紹一種新型的連續(xù)豆豉洗霉機, 這種連續(xù)式的豆豉洗霉機在洗酶時對成曲后的黑豆具有打散和搓洗的功能, 豆豉曲料的脫皮率低, 洗滌豆豉成曲表面的菌絲體、分生孢子及其粘污物后, 豆豉曲料在機器的噴淋下, 可以得到適當?shù)幕貪? 洗酶工作可以連續(xù)進行, 具有勞動強度低, 效率高, 便于操作, 便于維修等優(yōu)點, 同時該機設有水循環(huán)使用系統(tǒng), 可以充分利用水資源, 減少廢水的處理量, 有利于環(huán)境保護的功能。該豆豉洗霉機在豆豉生產廠家試用, 取得了很好的效果。
2 連續(xù)豆豉洗霉的工作原理
經制曲后的黑豆曲料通過機械或人工在進料控制器的控制下以一定的流量送入洗酶機的進料口( 見圖中1 所示) , 曲料的流量, 由進料閘門控制( 見圖中1) , 曲料流入洗酶機的洗酶槽后, 洗酶槽中的圓刺棍轉動并帶動洗酶機中的水運動, 水流把成團的曲料打散和對生長在料曲表面的菌絲體、分生孢子及粘污物進行沖刷洗凈。料曲流出后進入帶式噴淋機( 見圖中2 所示) , 噴淋水進一步對豆曲進行沖洗。噴淋帶的噴淋水清洗后豆曲后被循環(huán)到洗酶機中進行下一批料曲的清洗。在洗霉的過程中, 若出現(xiàn)過大的曲料未被水流沖散而堵塞洗霉槽時, 洗霉機設有兩個射流式沖洗裝置, 在無需停機的情況下把堵塞洗霉槽的結塊曲料沖散, 保證機器的連續(xù)運轉, 洗霉機可視曲料的洗霉要求進行無級調速。
3 連續(xù)豆豉洗霉機的結構
連續(xù)豆豉洗霉機的結構由兩臺單機組成,一是洗霉機, 二是帶式噴啉機, 整機如圖所示:

3.1 洗霉機

孢子、粘污物的豆豉曲料與水進行搓洗的空間以及調整在洗霉過程中的生產量、防止堵塞等。
圓刺棍。這是洗霉機的主要裝置, 裝置的形式是一圓拄形的棍棒上帶有一系列的小圓棒, 小圓棒的數(shù)量與安裝角度視所處理的豆豉曲料菌絲體、分生孢子、粘污物的形式、生長情況等情況而定。在圓刺棍的設計上,該機應用流體力學的原理, 裝置的洗霉是以水流的運動與豆豉曲料表面的! “霉”以及其粘污物進行摩擦而達到! “凈化”的, 因此, 豆豉曲料的脫皮較少, 水流與豆豉曲料! “摩擦”后, 曲料的表面較光滑。
出料裝置。洗霉機的出料口設在洗霉槽靠近末端橫截面的切線位置上, 設有調整出料量的裝置, 可以方便地視曲料的需要而進行調整, 防止曲料堵塞的射流沖洗裝置設在出料裝置的上方。
溢流裝置。溢流裝置在洗霉機中的作用是把洗霉后的被清洗物( 菌絲體、分生孢子、粘污物、雜物等) 在短時間內排出機外, 該機的溢流口設在與洗霉槽端面水平的位置上,且有足夠的溢流空間, 可以保證洗霉后的被清洗物在短時間內排出機外。
3.2 帶式噴淋機
主要由輸送帶、料厚控制器、噴淋噴頭、噴淋水回收系統(tǒng)及傳動系統(tǒng)等。帶式噴
濕度進行適當?shù)恼{整。帶右#將辣椒切割成3~ 4 cm, 加入牛油中低溫浸提1 h 左右- 加入粉碎花椒, 炒至出來麻味-加入老姜粉末、大蒜丁, 炒至味出-加入用黃酒溶的豆豉- 稍炒- 加入醪糟汁、冰糖、味精、雞精和酵母精- 加入熟菜籽油炒4~ 5 分鐘- 包裝-121 ? , 30 min 高溫滅菌-檢驗-成品。
4.2 操作要點
4.2.1 首先要了解所用原料的特點以及在火鍋調味料中的作用。
豆瓣使湯鹵顏色紅亮, 并產生醇和的辣味和咸鮮之味, 增加鹵汁香味; 醪糟汁則增鮮壓腥, 去異味, 使湯鹵有回甜之味; 花椒可以調味增香, 壓腥去異味; 干辣椒增加湯鹵中的辣味和香味; 精鹽定味增香, 提鮮加香, 壓制異味; 味精、酵抽提物、雞精都可以增鮮, 而且酵母抽提物中的鮮味物質耐高溫, 可使湯鹵
長時間燙煮而不失醇厚的鮮味; 冰糖去燥回味余甜; 五香料可去燥、去腥, 潤色等; 牛油不但可提供火鍋底料固體形態(tài), 和植物油一樣,也具有增香的作用。
4.2.2 精選原料是制作火鍋底料的基礎
例如, 辣椒和花椒, 從季節(jié)上講, 每年7~ 8月出產的花椒就比10 月出產的秋椒品質好。若從產地看, 陜西、四川富順、西昌、茂汶出產的花椒, 都顯的麻味足, 且香氣品質好。選花椒一般都選色氣油潤, 顆粒均勻, 花椒中小黑籽少,枝桿少, 香味濃郁持久, 用牙咬破后麻味足的花椒為好。干辣椒從品種上分有長辣椒、二金條、朝天椒、七星椒及云南小米椒等, 二金條辣椒色氣好, 香味正, 辣味柔和, 而朝天椒、七星椒、小米椒則個頭小而尖, 辛辣無比, 因此制作火鍋底料就可以利用兩者之長, 兼而用之。豆瓣醬以四川郫縣生產的為正宗, 豆豉以永川陳年豆豉為好, 其他應購買質量好的原料。
4.2.3 炒制過程中的問題
一是豆瓣以炒香發(fā)色油紅發(fā)亮為止, 炒嫩了吃起來有生豆瓣味, 豆瓣中的淀粉也易使糖鹵渾濁; 豆瓣炒老了, 易使湯汁變黑, 味苦。二是香料的搭配, 各種香料一定要按比例加入, 否則, 湯料易產生苦味和不適宜的香味, 也易改變川味火鍋的風味。
5 產品質量標準

色澤呈桔紅色, 具有火鍋特有的香味, 產品為固態(tài)。
